Sushi chefs likes to wipe their knives and cutting tray with a white cloth. Sometimes they forget that just washing the tray or the knife doesn’t mean the utensils are clean but they continue to use the same cloth to wipe the recently washed utensils. I’ve seen this done on many cooking channels.

Yuck!!!! That means the chefs pooped recently, most likely at work, and didn’t thoroughly wash their hands. I’ve been to a number of Asian restaurants and was disgusted by how some of their workers behave in the restroom. I’ve seen some who straight up walk out the door after using a urinal. Other I’ve seen briefly put their hands under a running faucet for 3-4 seconds literally with no soap and even their palms are still dry and walk out.
With sushi being prepared entirely by hand. Cross contamination with rice/fish with literal human 💩 is a no brainer.
