Chicken has to be cooked to at least 165 degrees Fahrenheit to destroy all pathogenic bacteria in the bird. You need to exceed that by at least 10 degrees Fahrenheit to provide a safety margin. Also , you do need to be able to fry it quickly b/c it's fast food (duh). And you need to be able to allow a temperature range for relatively unskilled workers to work within. So a range of 175-205 degrees Fahrenheit would be understandable.
The people should try fried rabbit. I tried it once. It tasted fine to me.
